For the salad
- 8 cups baby spinach leaves or mixed greens or arugula
- 2 large ripe pears cored and sliced
- 1/2 cup pomegranate seeds
- 2 ounces crumbled cheese goat, feta, or gorgonzola
- 1/2 cup nuts slivered almonds, walnuts or pistachios
For the dressing
- 1/4 cup apple cider vinegar or champagne vinegar
- 3 Tablespoons olive oil
- 1 teaspoon dijon mustard
- 1 1/2 Tablespoons honey
- salt and freshly ground black pepper to taste
Place all salad ingredients in a large bowl.
